The Best Toasted Chicken Caprese Sandwich

Why is this sandwich so great? It will actually keep you full and satisfied. Packed with antioxidants, lean protein, and nutrient dense greens, this sandwich will give you energy without feeling too full. You will also be very satisfied, because of how delicious it will be!

Ingredients
  

  • 8 slices sourdough bread
  • 12 oz grape tomatoes
  • 3 cups rotisserie chicken
  • 4 oz spreadable cheese fresh mozzarella, alouette, goat cheese, or boursin
  • handful arugula
  • 4 Tbsp pesto
  • 1 Tbsp olive oil
  • 4 tsp balsamic vinegar glaze
  • dash salt

Method
 

  1. Place a skillet on medium heat and add 1 Tbsp of olive oil.
  2. Rinse the grape tomatoes and place in the skillet with a dash of salt. Optional: halve the grape tomatoes before placing in skillet.
  3. Let tomatoes cook undisturbed for 2 minutes. Then stir occasionally for an additional 5 minutes, allowing the tomatoes to cook down into a paste/sauce. Remove from heat and set aside.
  4. Lightly toast the sliced bread in a toaster.
  5. Assemble the first slice of bread as follows: bread, pesto, handful of arugula.
  6. Assemble the second slice of bread as follows: bread, cheese spread, tomato spread, rotisserie chicken, topped with drizzle of balsamic glaze.
  7. Combine sandwich and repeat for however many sandwiches you are making. Enjoy!

Notes

To increase the number of servings, the only thing you really need to increase is the tomato base. To create 8 sandwiches, use 24 oz of grape tomatoes and 2 Tbsp. of olive oil. The rest of our ingredients usually come in containers larger than what we use for 4 sandwiches.
