Method
- In a stand mixer, add only 2 cups of flour, all the sugar, yeast, salt, warm milk, 5 Tbsp. of softened unsalted butter, and egg. (Warm the milk in a microwave safe bowl for 45-60 seconds in 15 second intervals and check with a thermometer. This usually gets the milk to ~120℉.)
- Use a dough hook and mix at a low speed until the flour is just barely incorporated. Scrape down the sides.
- Increase the speed to medium and mix the dough for 2 minutes.
- Slowly add in the remaining 3 cups of flour in 1/2 cup intervals, mixing on low until incorporated.
- Once all 5 cups of flour is incorporated, increase speed to medium and mix for 2 minutes. A ball of dough will start to take shape.
- You can add up to an additional 1/2 cup of flour, but the dough should still be somewhat sticky.
- Take a large bowl and lightly grease the interior base and walls. Transfer the dough ball to this greased bowl. Cover with plastic wrap or towel and place in a warm area of your home for 30 minutes.
- Lightly grease a 9 x 13 baking dish and remove the cover from your rising dough.
- Pinch off sections of dough which are about 2 ounces in weight (size of a golf ball). Stretch the dough around itself to create a smooth top and tuck the stretched dough underneath. This will create a uniformed dough ball. Place the dough ball into the greased baking dish. Tip: Take a very small bowl and add a bit of olive oil/vegetable oil to it, and you can dip your fingertips in the oil to work with the dough easier.
- Once all dough balls are in the baking dish, cover with plastic wrap or towel again and place in a warm area of your home for an additional 30 minutes. Preheat oven to 375 ℉.
- Once risen for the second time, place the dish into the oven and bake for 15-17 minutes until a golden crust forms on the dough balls.
- Remove from oven and brush with 2 Tbsp. of butter and serve!
Notes
Make Ahead: You can easily prep these rolls the day before. Follow all steps as stated, but stop before the second rise. Once you have formed the dough balls and placed into the greased baking dish, cover and place in the fridge. When you are ready to bake the next day, remove the dish from the fridge and let sit out on the counter for an hour before baking. This will allow proper time for the baking dish (if using glass) to come to a safe temp before baking in a hot oven, and will also allow for the second rise to occur.
