This sandwich includes fresh ingredients, simple instructions, and can easily be modified to your own preferences. If you have a garden, this is also a great way to use up some of those tomatoes and greens. With all the variations you can make, you will never get bored.

What You’ll Need

Rotisserie Chicken
I tend to use shredded rotisserie chicken because I will use it for multiple recipes and it’s so easy. I do not have time to season, boil or bake chicken breast for every recipe.
Sourdough Bread
I prefer a bread like sourdough for this recipe, but really any bread will work. All we need is something we can lightly toast and won’t fall apart when packed with ingredients.
Arugula
Personal preference, but I like how arugula tastes on a sandwich.
Grape Tomatoes
You can use any tomato you like. I prefer grape tomatoes because I find they cook down easily without too much liquid and provide a perfect flavorful base.
Soft Cheese Spread
Any soft cheese will work on this sandwich. I will usually get boursin, fresh mozzarella, goat cheese, or alouette. This provides a creaminess to the sandwich which you won’t get with sliced cheese.
Pesto
Any jarred pesto you prefer! Props to you if you make your own from fresh basil!
Olive Oil
Balsamic Vinegar Glaze
Key term here is “glaze”. Balsamic glaze is a thickened sweet reduction of regular balsamic vinegar. It truly provides the finishing touch on this sandwich.
How to Make the Toasted Chicken Caprese Sandwich

Step 1: Cook down the tomatoes
Take your rinsed grape tomatoes and dry fully. Add them to a pan on medium heat with a drizzle of olive oil and pinch of salt. You can halve the tomatoes if you’d like, but I find that they break easily once cooked for a bit. Let the tomatoes cook down for about 2 minutes without touching. You can then stir occasionally for another 5 minutes. The main goal of this step is to cook the tomatoes down, so they are spreadable. Once heated through and softened, set aside until assembly.
Step 2: Toast the Bread
Since I’m already cooking the tomatoes, the last thing I want to do is get another pan out to toast the bread. Instead, I will just throw the sliced bread into a toaster for a slight crunch.
Step 3: Assemble
Take your sliced bread and assembly as follows:
Slice #1 – bread, pesto spread, handful of arugula
Slice #2 – bread, cheese spread, tomato spread, rotisserie chicken, topped with drizzle of balsamic vinegar glaze
Combine!
It is really that simple and so delicious. You will likely have leftover toppings to make multiple sandwiches.

Tips for the Best Toasted Chicken Caprese Sandwich
LIGHTLY toast your bread
You do not want a full-on piece of toast to scratch up the roof of your mouth. There is a fine line between flimsy and crunchy and your sandwich depends on it!
Cook down your own tomatoes
You can truly tell the difference in freshness from cooking down your own tomatoes versus buying a pre-made tomato spread at the store. Not only is it super simple and quick, but you will be saving some money by making your own.
Use rotisserie chicken
I’m sure you know how good rotisserie chicken can be. These sandwiches are supposed to be simple and quick to make. While you can cook and season your own chicken, rotisserie chicken is highly recommended for this recipe. A sandwich should never take more than 15 minutes to make in my opinion.
Variations
Cheese
Any soft cheese will be delicious in this recipe. Highly recommend trying fresh mozzarella to make a true Caprese.
Bread
Any sliced bread should work great in this recipe. Try to get something not too thinly sliced. You also want to make sure the bread can be slightly toasted on the outside and still soft within the center.
Tomato Spread
Alternatively, you can take sundried tomatoes in oil at the store and chop into small pieces and use as the tomato base.

I love to pair this sandwich with some fresh fruit, especially in the summer.
Storage Tips
I wouldn’t recommend pre-assembling the sandwiches, as they can get soggy if sitting for too long.
Refrigerating
You can refrigerate the concentrated tomato base in the fridge for up to 1 week, as long as you are not adding garlic or fresh herbs. If you are, only keep in the fridge for about 4 days.
FAQ Section
Do I have to toast the bread?
Not at all! Toasting the bread gives a slight crunch which is great with the other ingredients, but not necessary.
How do I bring this to work if it will get soggy?
To prevent the sandwich from getting too soggy, I’d recommend waiting to add the tomato base and balsamic glaze. Assemble your sandwich like instructed but leave those ingredients out. When you’re ready to eat the sandwich just spoon on the tomato base and top with the balsamic glaze.

Ingredients
Method
- Place a skillet on medium heat and add 1 Tbsp of olive oil.
- Rinse the grape tomatoes and place in the skillet with a dash of salt. Optional: halve the grape tomatoes before placing in skillet.
- Let tomatoes cook undisturbed for 2 minutes. Then stir occasionally for an additional 5 minutes, allowing the tomatoes to cook down into a paste/sauce. Remove from heat and set aside.
- Lightly toast the sliced bread in a toaster.
- Assemble the first slice of bread as follows: bread, pesto, handful of arugula.
- Assemble the second slice of bread as follows: bread, cheese spread, tomato spread, rotisserie chicken, topped with drizzle of balsamic glaze.
- Combine sandwich and repeat for however many sandwiches you are making. Enjoy!
